Fresh Find #1 - Something new to do
Learn the ropes at shucking school

With the Hawkesbury River filled to the brim with oysters, our very own underwater gems, the Hawkesbury River Oyster Shed is honouring these guardians of the ocean with their Eat Me Raw Shucking School. Happening every Thursday and Friday, the crew at the Oyster Shed are bringing you the chance to master the essential skill of shucking a fresh oyster, grown just kilometres away in their oyster leases. In this workshop, their expert oyster farmers will show you the ways on how to shuck oysters safely and efficiently.

You’ll also discover the behind-the-scenes world of oyster farming and what makes the Hawkesbury River the perfect waters for growing world-class oysters that restaurants around NSW are wanting to get their hands on. Perfect for seafood lovers and oyster connoisseurs alike, it’s time to express your interest in this workshop on the Hawkesbury River Oyster Shed website and bring together your crew to the Hawkesbury River Oyster Shed for this unique glimpse into the art of oysters.

Fresh Find #2 - New places to eat & drink
Waterfront views meets fine dining

Tucked away in the peaceful peninsula of Davistown, is this waterfront ‘burb’s newest addition, Chilli’s Cottage. This beautifully restored weatherboard cottage invites guests walking along the fringes of Davistown to unwind in style, as it brings a nostalgic yet modern charm. With its fresh and bright interior, vintage-inspired décor and water views, this restaurant is a great base for couples, families, or friends to slow down and simply enjoy excellent food.

The culinary experience begins with fresh house baked sourdough bread served with whipped garlic chive butter, as all culinary experiences should. Notable dishes also include their grilled Moreton Bay bugs adorned with toasted macadamias, kangaroo skewers coupled with sambal and of course, to end the dining experience on a sweet note, their banana sundae made in-house, topped with praline, shaved chocolate curls and caramel sauce. If you’re starting your morning off right and visiting for breakfast, make sure to pick up their cinnamon walnut scroll for that moreish fix, or grab their grilled pork sausage on toast topped with grilled mushrooms for a savoury flavour.

Either way, whether you’re checking out Chilli’s Cottage at the early hours of the morning or catching up with friends for lunch, this new restaurant has you sorted.

Fresh Find #3 - New maker & creator to explore
Tantalising flavours ignite

Whilst Wyong’s very own Amber Lane Distillery isn’t new to the Coast, this crew have been whisking up something new and quite ‘neat’ in the background for whisky lovers to try.  This month, they’ve unveiled their newest whisky expression, Silk Lane. This first whisky release for this year has come hot off the press and can now be purchased from online or in-store at their distillery for $149.

Dubbed the “younger brother” of Amber Lane’s Silk Road, which sold-out twice in record time may we add, is an homage to sugar and spice (and all things nice of course), with its subtle and creamy finish compared to its punchy and bolder counterpart. When you take a swig of this newest flight, be sure to expect the top notes of cinnamon, oak, honey and vanilla, with a quick follow up of deeper notes of spices, red frogs and citrus. With this newest addition being the third and final member to Amber Lane’s core range, you’ll want to snap this up quick smart and give this maker and creator a try.
